Garlic paste is one of those products where the difference between good and ordinary is obvious the moment the lid comes off.
Ours is made from central Indian garlic that is naturally high in pungency and aroma, peeled and ground fresh. It is 99% garlic and 1% preservative, with no added water and no added oil, which is why the aroma is strong and unmistakably garlic.
For a kitchen or a food manufacturer, the value is straightforward. Peeling and grinding garlic at volume is slow, labour-intensive work, and the result varies with whoever does it that day. A ready paste removes that entirely and gives the same garlic character in every batch. It is used in marinades, sauces, ready meals, pickles, and anywhere garlic is a base.
